Summer Pudding is a simple no cook pudding that uses store cupboard ingredients. And a really good recipe to make with the kids.
380g pack frozen fruits defrosted
4 medium slices white bread, crusts removed and halved
2 tbsp caster sugar
Line a 750ml bowl with clingfilm
Place 100g of the defrosted fruits along with 3 tbsp of water in a food processor and blend until pureed.
Sieve and discard any pips.
Dip the bread in the juice and line the bowl reserving 2 halves of bread for the top.
Mix the remaining fruit into any left over juice with sugar and spoon into the bowl.
Top with the reserved bread. Cover the top with Clingfilm and place a small saucer with a weight on top.
Chill for 3 hours. Serve with cream or ice cream.
