- 4 Salmon filets – skin removed
- 200g spinach wilted and seasoned
- 50z packet of boursin herb or garlic cheese
- 1 egg yold
- 6 tbsp of creme fraiche
- 1tbsp lemon juice and rind of 1 lemon
- 2 tbsp chopped parsely
Mix the cheese, egg yolk, creme fraiche, lemon juice and chopped parsley together until smooth.
Spread the wilted spinach in the base of a baking dish.
Lay the salmon top top and season, spoon over the topping making sure it is covering the salmon and dust with paparika
Bake for 20 minutes in a oven preheated to 180 untiltopping is bubbling and the salmon just cooked.
Serve with salad or new for a more healthy option a simple green salad.
