Make Your Own chocolates
Make your own chocolates – is not as difficult as you might think. Try this simple recipe for chocolate truffles. This is impressive not just for Mother’s Day but to take to someone’s house as a supper party present.
- 12oz 350g plain chocolate 70% cocoa solids or 50% for people who do not like dark chocolate.
- 4oz/115g unsalted butter
- 1 tabsp of vanilla extract
- 14 fl oz / 400 ml of double cream
- Optional extras : a teaspoon of your favourite liqueur, coconut, cocoa powder, chopped nuts, icing sugar for dusting.
Melt the butter chocolate and double cream over the top of a double boiler over simmering water and stir continuously . Stir in the vanilla and a teaspoon of liqueur (optional).
Pour into a shallow dish and leave in the refrigerator until set – several hours or overnight is good.
When the chocolate mixture has set form small balls either using a teaspoon or a melon baller to form small balls. Work quickly to do this before the chocolate starts melting.
If you wish but not necessary; roll in icing sugar, coconut, cocoa powder or chopped nuts. Place on a baking tray lined with baking paper or in small sweet cases and cover and chill until ready to served.
These chocolate truffles will keep in an air tight container in the refrigerator for up to a week.
Chocolate Dipped Fruit
- 8oz 25 g plain chocolate
- 1lb /450g or assorted fruits such as strawberries and dried apricots
Melt the chocolate in the top of a double boiler. Using a cocktail stick spear the fruit, dip it into the chocolate, allow the excess chocolate to drip back into the pan.
Place the chocolate covered fruit on a tray which is covered in baking paper. Place in the refrigerator uncovered and allow the chocolate to harden.
To serve: Can be placed into a jar or box with skewers as a gift or served with madeira cake and fresh cream as a desert.
