Simple Cream Slices will impress your guests and are a joy to eat
Mille Feuilles or as we call them cream slices are absolutely one of our most favourite cream cakes. Most of the recipes for these are a bit fiddly which makes them a bit out of our league generally as Fiddly baking is not our strong point.
But this recipe although it may not be a completely full blown Cream Slice or Mille Feuilles it is really simple to make and not as fiddly either. Best of all it is still really delicious.
Ingredients
225g (8oz all butter ready-made puff pastry
1 medium egg white beaten
1 tbsp of castor sugar
strawberries washed and thinly sliced
150ml (1/4 pint) of double cream whipped
3 tbsp of strawberry jam
Instructions
Preheat the oven to 220 C, or for a Fan oven 200 C, Gas Mark 7.
Line a baking tray with baking parchment. On a lightly floured surface, roll out the pastry to make a rectangle approx 25 x 23 cm (10×9″).
Now with a sharp knife cut the pastry in half length ways, and then cut each half into 6 equal slices.
Carefully transfer pastry to the tray and prick all the pastry slices with a fork. Bush lightly with egg white and sprinkle each of them evenly with castor sugar.
Bake in the oven for 12 to 15 minutes until golden and risen.
Allow to completely cool on the tray.
When you are ready to serve remove from the tray and turn the slices over (the sugar side of the slices needs to be on the outside of each slice). Then smooth a little jam on to each of the non sugar side of the slices add cream and sliced strawberries and cover with the other slice which should be sugar side up.
Serve immediately.
