With Halloween fast approaching there maybe the odd pumpkin sitting around ready to become a lantern. So if you are wondering what to make with your pumpkin’s insides here is a really easy and quick tasty recipe for a good old fashioned pumpkin pie.ng either of the following Halloween recipes.
Easy Pumpkin Pie
- · 9 inch ready baked pastry flan base
- · 550g (1lb 4oz) diced pumpkin (you can also use butternut squash)
- · 100g (4oz) caster sugar
- · 3 large eggs
- · 200 ml (7fl oz) evaporated milk
- · 120ml (4fl oz) golden syrup
- · 1 tsp vanilla extract
- · A good pinch of salt
- · ½ tsp mixed spice
- · 1 tsp cinnamon
Preheat the oven to 190C or a fan oven to 170C. Gas Mark 5
Put the squash into a large bowl, cover with cling film and microwave on High for 6 to 8 minutes until soft. You will probably have to do this in two batches. Drain any liquid away and then puree in a food processor. Allow to cool.
Whizz 450g (1lb) of pumpkin puree in the food processor with all the remaining ingredients until smooth. Pour into a pastry case and bake for one hour or until puffy and just set.
Cool in the tin for just ten minutes then remove from the tin and leave to cool.
Serve with whipped cream.
