Easy pumpkin pie – simple to make and delicious
With Halloween fast approaching there maybe the odd pumpkin sitting around ready to become a lantern. So if you are wondering what to make with your pumpkin’s insides here is a quick and easy recipe for a delicious and traditional Pumpkin pie.
Ingredients
- 9 inch ready baked pastry flan base
- 550g (1lb 4oz) diced pumpkin (you can also use butternut squash)
- 100g (4oz) caster sugar
- 3 large eggs
- 200 ml (7fl oz) evaporated milk
- 120ml (4fl oz) golden syrup
- 1 tsp vanilla extract
- A good pinch of salt
- ½ tsp nutmeg
- 1 tsp cinnamon
- icing sugar for dusting
Preheat the oven to 190C or a fan oven to 170C. Gas Mark 5
Easy pumpkin pie method
If you have a microwave put the squash into a large bowl, cover with cling film and microwave on High for 6 to 8 minutes until soft. You will probably have to do this in two batches. Drain any liquid away and then puree in a food processor. Allow to cool.
Alternatively cook on the hob. Place the pumpkin in a large saucepan, cover with water and bring to the boil. Cover with a lid and simmer for 15 mins or until tender. Drain pumpkin; let cool.
Whizz 450g (1lb) of pumpkin puree in the food processor with all the remaining ingredients until smooth. Pour into a pastry case and bake for one hour or until puffy and just set.
Cool in the tin for just ten minutes then remove from the tin and leave to cool.
