Delicious And Simple Courgette Supper Recipes For Busy Mums
This is the second year of our vegetable plot and I am inundated with courgettes at the moment. Now although I eat and enjoy most vegetables, courgettes were never one of my favourite ones. Well how times have changed. I love courgettes now – and I thought I would share a couple of simple courgette recipes with you which have helped me change my opinion of courgettes being a bit on the bland side.
Rinse and chop as many courgettes as you like and place in a roasting dish spray or drizzle olive oil over them season with salt and black pepper and roast until lightly golden in colour. Great as a change to sautéed courgettes and much tastier – than when I sauté them anyway.
We also have lots of ripe tomatoes. So I would also recommend adding a similar quantity of tomatoes chopped in half to the courgettes and then season and roast as above. Even more delicious.
To add some protein you can add cooked chicken or I really like goat’s cheese after the courgette and/ or tomato mixture is cooked. This is great as a light lunch – or stirred in with pasta can make a simple tasty and healthy supper for the family.
Courgette and Parmesan or Cheddar Cheese Soup.
1 tbsp chopped garlic
60ml/2fl oz extra virgin olive oil
handful of basil leaves
pinch of salt and ground white pepper,
1 kg/2¼lb green courgettes, cut into slices
750ml/1¼ pint chicken stock
60ml/2fl oz single cream or creme fraiche
2oz freshly grated parmesan, plus extra to serve – cheddar and goats cheese also work well too.
Take the courgettes and a handful of basil leaves, salt, pepper and the chopped garlic and cook in the olive oil on a low heat until lightly browned and slightly soft.
Add the chicken stock and continue cooking uncovered until soft which will probably take about 8 minutes. Liquidise the mixture in a blender and return to the pan. Add a couple of dollops of crème fraiche or single cream along with the cheddar, parmesan or even goats cheese.
