If you want to create a one stop supper with a portion of protein add cooked chicken or goats cheese to your roasted courgette and/or tomatoes and pop in the oven. Alternatively stir into cooked pasta.
Courgette and Brie or Cheddar Cheese Soup.
When your courgettes have been left a little too long – or you just feel inundated with courgettes, making a courgette soup can ensure you they all get used up.
1 tbsp chopped garlic
60ml/2fl oz extra virgin olive oil
teaspoon of ground coriander
pinch of salt and ground white pepper,
1 kg/2¼lb green courgettes, cut into slices
750ml/1¼ pint chicken/ vegetable stock
60ml/2fl oz single cream or creme fraiche
2oz freshly grated Parmesan, plus extra to serve – cheddar and goats cheese also work well too.
Take the courgettes, salt, pepper and the chopped garlic and cook in the olive oil on a low heat until lightly browned and slightly soft.
Add the chicken stock and ground coriander and continue cooking uncovered until soft which will probably take about 8 minutes. Liquidise the mixture in a blender and return to the pan. Add a couple of dollops of crème fraiche or single cream along with the cheddar, Parmesan or even goats cheese. Taste to ensure well seasoned.
If you are planning to freeze the soup emit the cream/ creme fraiche and cheese. Add the cream/cheese when you are re heating the soup through once you have defrosted it and are bout to serve. Do make sure that you check t he seasoning
